This Rasteau from Château De La Gardine is grown in vineyards with three different soil types, each providing the wine with distinctive characters: calcareous brown soils, skeletal soils on marl and red soils on limestone.
The vines range from 40-60 years old. The grapes were hand harvested, sorted and fully destemmed.
They were co-fermented before being aged in a mixture of cement and stainless steel vats.
Over time, more complex aromas of cherry clafoutis and kirsch reveal themselves.
