Produced by Hollick since 1992, it continues its reputation as a wine of softness and liveliness, and can be consumed on any celebratory occasion.
The Coonawarra 2012 Vintage is described as excellent by all of the region’s winemakers. Good winter rains resulted in a full soil moisture profile, leading to ample carbohydrate reserves in the vines. These optimal growing conditions, combined with an early burst of warm weather, meant that the vines started their growing cycle a couple of weeks early. The lack of frost and small but frequent rains maintained the early season.
The fruit for this Sparkling Merlot was picked, crushed and then fermented on its skins for six days in stainless steel tanks.
This base wine was then matured in a mixture of French and American oak for eighteen months.
The secondary yeast fermentation which changes the wine from still to sparkling, has produced a fine, persistent bead, which is fresh and fruity.
