A delightful Cava made in the Champagne method is a blend of three traditional Penedes grape varieties – Xarel-lo, Macabeu and Parellada.
The first gives a great floral freshness to the wine, the second adds a distinctive fruity character and the last adds body and structure.
Initial fermentation was in stainless steel tanks at 16 degrees to preserve all of the fresh fruit qualities.
Secondary fermentation was in the bottle where it was also aged for around 12 months.
Pale yellow in colour it has medium intensity of aroma which is dominated by white fruits – pear and apple – together with floral notes above and a slight hint of creaminess.
Fresh on the palate, lively with fruit flavours it culminates in a light, soft and extremely pleasant finish.
Just the thing to enjoy as an aperitif or with a wide variety of appetisers and tapas.
