Blended from 40% each of Sauvignon and Colombard, 15% Gros Manseng and 5% Ugni Blanc all of which were given a cold pre-fermentative soak to enhance the fruit characteristics, the wine has great minerality and about 1 gram of extra residual sugar to help carry those fruit flavours. There are delightful aromas of exotic fruits with notes of acacia behind.
The palate is fresh and lively making it a wonderful aperitif yet it is equally at home with seafood, fish or white meats.
The intention here was to preserve and emphasise the minerality inherited from the iron-rich Sables Fauves soils and to pair this with the bright fruit and acidity of the blend of grape varieties used, resulting in a wine which is delightfully fruity and crisp.
