This bridges the styles of the old dense Pinotage and the fruit driven, modern variety.
Fermented in tanks, malolactic and maturation were completed on staves. Approximately 15% of the wine was fermented in small open fermenters and hand-punched before being pressed off prior to full dryness into small French and American oak barrels.
Painted Wolf is now the preferred name for South Africa’s Wild Dog. The winery both supports the conservation of this species and draws inspiration from it – the wines, like the animal, are colourful, energetic and balanced in full flight.
With a shared philosophy and passion Painted Wolf donate 5% of their turnover to TUSK, a long established charity helping the rarest and most endangered of Africa’s animals including the dwindling numbers of African Wild Dogs.
Pinotage is the best wine in the world to pair with Mexican dishes like Fajitas or that glorious confection of chicken, chocolate, cumin seeds, smoky ancho chilies, pumpkin and sesame seeds – Mole Poblano. It is also very good with other flavoursome American regional specialties like Carolina Pulled Pork or smoky Texas B.B.Q beef rib. The wine also works with Moroccan flavours, Malaysian dishes and of course South African cuisine.
