The grapes for this wine are sourced from select vineyard sites in Robertson (65%), Paarl (20%) and Elgin (15%).
The vines range in age from 6-16 years. Approximately 20% of the vines are dry farmed, with low- yielding bush vines.
Grapes from the cooler coastal regions bring a zesty citrus and herbal character, while warm climate fruit imparts a tropical fruit profile and a fuller texture. Harvested in the cool early morning hours, the grapes are crushed and gently pressed. After the juice was chilled and settled, it was cold fermented in stainless steel tanks.
Approximately 20% of the wine was aged on its lees for three months before blending and bottling.
Enticing citrus and tropical fruit aromas lead to fresh, zesty flavours of pineapple, lemon-lime, mango and green fig, backed by a racy acidity.
Food Match: Salad greens and other sharp ingredients like capers, tomatoes and vinaigrettes.
